One Pan Sweet Potato Noodles with Meatballs

Ingredients

1 Tbsp olive oil
4 Oz baby bella mushrooms, thinly sliced
1/2 cup(s) red bell pepper, chopped
16 Oz H-E-B Italian Meatballs
24 Oz Central Market Organics Mushroom Pasta Sauce
10 .7000 Oz sweet potato spirals

Instructions

Heat a large pan over medium-high heat. Add oil and mushrooms to pan. Sauté 2 to 3 minutes, to a light brown color. Add bell peppers, stir and cook 2 to 3 more minutes, until soft.

Push pan ingredients to the side and add meatballs. Brown on all sides, about 10 minutes.

Add sauce and bring to a simmer, about 3 to 4 minutes. Add sweet potato spirals and stir to combine. Cover and simmer 10 minutes or until spirals are tender firm. Serve with an awesome crusty bread!
