Olive and Lemon Roasted Cauliflower

Ingredients

Recipe makes 4 Servings

2 Tbsp unsalted butter
1 head of cauliflower
1 1/2 Tsp kosher salt
1 Tsp coarse ground black pepper
1/2 cup(s) Cookwell & Company Olive & Lemon Vinaigrette
2 Tbsp water
1/4 cup(s) Parmesan cheese

Instructions

Preheat oven to 400°F.

Place a large oven safe sauté pan over medium heat with butter. Once butter starts to foam and turn brown add cauliflower.

Toss cauliflower so that it's evenly coated in the browned butter and season with salt and pepper.

Cook cauliflower for two minutes, or until lightly browned.

Add vinaigrette and water to pan and cover with lid.

Roast cauliflower 6 to 8 minutes, or until tender.

Place cauliflower on a serving platter and top with Parmesan before serving.
