Old Fashioned Glazed Donuts

1 Red Star Active Dry Yeast
1 cup(s) lukewarm water
1/3 Tsp salt
3 Tbsp H-E-B Pure Cane Sugar
3 Tbsp vegetable shortening
2 cup(s) H-E-B The Baker's Scoop All Purpose Flour, plus more for kneading & rolling out dough
4 cup(s) vegetable oil, for frying, plus 1 tablespoon
1 Tbsp light margarine, melted
1/4 cup(s) hot water
3 cup(s) powdered sugar, sifted
1 Tsp pure vanilla extract

Instructions

In a large bowl, dissolve yeast in lukewarm water.

Add salt, sugar and shortening, and stir until dissolved.

Add flour and mix until incorporated enough to hold together.

Turn out onto a lightly floured surface and knead until dough is smooth.

Spread 1 tablespoon oil in a large bowl, add dough then turn so all sides are coated.

Cover with a towel then set aside in a warm place until dough is double in volume, about 30 minutes.

On a lightly floured surface, knead dough a little, adding only enough flour so it doesn't stick. Set dough to the side of the work surface.

Flour surface well to prevent sticking, place dough on flour and roll out to 1/2-inch thickness (roll in as little additional flour as possible).

Using a donut cutter, cut out donuts, remove excess dough but leave donuts where they are.

Let rise 20 minutes.

Meanwhile, make glaze by combining margarine, hot water, powdered sugar and vanilla. Mix well and set aside.

Place oil in a medium size pot over medium-high heat, about 375°F.

Fry donuts in hot oil about 3 minutes, turning once halfway through.

Dip donuts in glaze and set on cooling rack for glaze to harden slightly before serving.
