Recipe makes 5 Servings

1 Tsp butter
1 1/4 cup(s) steel cut oats
1/2 cup(s) walnuts, divided use
2 Tsp cinnamon
2 cup(s) water
1 cup(s) low fat buttermilk
1 Tbsp Sola Sugar Substitute
3 Tbsp flax seeds
1 Tbsp vanilla extract
1/2 cup(s) raisins, dried cranberries are good too
4 Tbsp sugar free maple syrup

Instructions

Melt butter in a 4 quart saucepan over medium-heat. Then add in oats, 1/2 of walnuts, and cinnamon. Cook 3 to 4 minutes until oats begin to toast.

Add in 2 cups of water and bring to a boil, reduce heat and simmer 10 to 15 minutes, stirring occasionally, until oats are tender.

Add in 1 cup of buttermilk, flax seeds, sola, and vanilla extract. Cook an additional 5 to 8 minutes or until oats are thickened.

Serve in a bowl and top with raisins, remaining walnuts and a drizzle of maple syrup.
