Mustard & Apricot Glazed Salmon

Recipe makes 4 Servings

4 salmon fillets
1 Tbsp Adams Reserve Berbere Seasoning
1 Tbsp extra virgin olive oil
3 Tbsp apricot preserves
1/2 cup(s) Whataburger Honey Mustard Dressing
1/4 cup(s) chives, chopped (for garnish)
1 Tsp kosher salt

Instructions

Preheat oven to 400ºF.

Rub salmon liberally with the berbere seasoning and olive oil, set aside.

Place salmon skin side down onto a sheet pan lined with tin foil (for easy clean up).

Bake salmon 8-10 minutes or until internal temperature is 140ºF and salmon is no longer translucent.

Combine apricot preserves and honey mustard together in a small bowl.

Once salmon is cooked add the apricot mustard sauce liberally to the top of each piece of salmon, garnish with chopped chives and season to taste.
