Ingredients

Recipe makes 8 Servings

1/2 Lb whole wheat penne pasta
1/2 Lb extra lean ground beef
1 Tbsp canola oil
1 green bell pepper, diced
1 red bell pepper, diced
1/2 cup(s) yellow onion, diced
1 Tbsp Italian seasoning
1 Pt cherry tomatoes, halved
1 cup(s) spinach, chopped
2 Tbsp butter
2 Tbsp flour
2 cup(s) H-E-B Select Ingredients Fat Free Milk
1 cup(s) part skim mozzarella, shredded

Instructions

Cook pasta according to package directions. Drain and set aside.

In a large sauce pan, heat oil and brown beef.

Next, add peppers, onions, and Italian seasoning. Cook, stirring frequently, until onions are translucent and peppers are tender.

Add tomatoes and cook until blistered. Turn off heat, add spinach and stir to combine.

To make béchamel sauce, in a saucepan, melt butter over medium high heat. Add flour and stir with a wooden spoon. Cook until flour turns sandy in color and texture, then whisk in milk.

Allow mixture to thicken. Add half the mozzarella. Stir until melted.

Combine all ingredients and pour into a 9 x 13 baking dish. Top with remaining cheese.

Bake at 350ºF for 20 - 30 minutes, or until cheese is melted and bubbly.
