3 Tbsp lime juice
1 Tbsp honey
2 Tbsp roasted walnut oil
2 dragon fruit, diced
6 Oz H-E-B Organic Blueberries, washed and dried
1 Lb fresh strawberries, washed, tops trimmed and diced
1/4 cup(s) fresh mint, roughly chopped
1/4 cup(s) toasted coconut

Instructions

Whisk together lime juice, honey and walnut oil until dressing just comes together. Set aside.

In a serving bowl, combine all the fruit, mint, a few tablespoons of dressing to coat and toasted coconut.

Mix until everything is combined then season with a pinch of salt and pepper. Serve immediately or cover and refrigerate to allow flavors to meld.
