Monterey Mushroom Burger

Ingredients

Recipe makes 6 Servings

1 Tbsp olive oil, divided use
7 Oz diced white onions, about 1.5 cups
8 Oz Monterey Sliced Mushrooms, diced small
1 1/2 cup(s) black beans, cooked
1 cup(s) H-E-B Premium Seasoned Croutons, crushed
1 cup(s) H-E-B Swiss Cheese, diced
1 cup(s) rolled oats, ground, divided use

Instructions

Preheat 1/2 the oil in a large skillet on medium-high. Add onions and mushrooms and sauté several minutes until onions are translucent. Remove from heat and set aside.

In a medium sized bowl, add beans and mash with a fork or potato masher. Transfer cooked onions and mushrooms to the bowl.

Blend in croutons, cheese and 1/2 the oat flour. Season generously with salt and pepper then mix until well combined. If mixture appears too wet or loose, add remaining oat flour.

Divide mixture up into 6 or 8 patties and place on a sheet pan.

Add remaining oil to sauté pan and heat on medium-high. Add patties a few at a time and cook until crisped and browned, about 4 minutes per side. Repeat until all patties are cooked.

Top burgers with traditional toppings and enjoy.
