1/2 cup(s) yellow onion, finely chopped
1/2 cup(s) celery, finely chopped
2 Tbsp H-E-B Extra Virgin Olive Oil
1 1/2 cup(s) Domo Vegetarian Risotto
29 Oz H-E-B Reduced Sodium Chicken Broth
1 1/2 cup(s) water
1/2 Tsp H-E-B Black Pepper
2 Tbsp H-E-B Oragnic Mint, shredded
2 cup(s) H-E-B Green Peas Petite
1/3 cup(s) H-E-B Grated Parmesan Cheese

Instructions

Finely chop onion and celery.

Heat olive oil in a 3-quart saucepan over medium heat.

Saute onion and celery 5 minutes.

Add rice and saute 3 minutes.

Pour in broth, water and pepper.

Bring to a boil and cook 10 minutes, stirring occasionally.

Meanwhile, remove mint leaves from stems.

Stack leaves and slice thinly to shred.

Stir frozen peas into rice mixture.

Cook 10 minutes, stirring frequently, until peas and rice are tender.

The consistency should be moist but not soupy.

Remove from heat; stir in Parmesan and mint.

Cover and let stand 5 minutes.
