2 Lb H-E-B Grass Fed Ground Beef
1/2 cup(s) fresh mint, chopped
1/2 cup(s) fresh parsley, chopped
1/2 cup(s) fresh cilantro, chopped
2 cloves of garlic, minced or zested
1 large jalapeño, seeded and minced or diced small
2 Tsp kosher salt, 1 tsp if using iodized salt
2 Tsp cracked black pepper
2 Tsp ground cumin
2 Tsp ground coriander
1 Tsp lemon zest, or zest of a medium to small lemon
1/2 cup(s) panko breadcrumbs
2 large eggs
2/3 cup(s) ice cold water
1/3 cup(s) grapeseed or vegetable oil, as needed for sautéing meatballs

Instructions

In a bowl, combine ground beef, fresh herbs, garlic, jalapeño, salt, pepper, cumin, coriander and lemon zest.

Mix well until just combined then add panko, eggs and cold water, and mix until everything is fully incorporated.

Cover and refrigerate for 30 minutes to allow flavors to set up and for meat to rest.

Meanwhile, preheat oven to 400ºF.

Roll meat mixture into meatballs about the size of golf balls and place on a sheet pan or plate.

Place a large sauté pan over medium heat and add oil. Set a 9 x 13 inch oven safe casserole dish next to sauté pan.

When oil is hot, fry meatballs in batches until nicely browned on all sides, approximately 10 to 15 minutes depending on size, then transfer to the casserole dish.

Place in oven and bake until meatballs are fully cooked with an internal temperature of at least 160ºF, about 10 to 15 minutes.

Allow to rest a few minutes then serve over rice with yogurt, or on a bakery roll as a sandwich.
