Ingredients

Recipe makes 4 Servings

1 Lb boneless, skinless chicken breasts
1/4 Tsp salt
1/2 Tsp pepper
2 zucchini, chopped
1 yellow squash, chopped
1 medium yellow onion, chopped
1/2 cup(s) H-E-B Original Hummus
2 lemon
1/4 cup(s) Hill Country Fare Whole Wheat Bread Crumbs
1 Tsp smoked paprika

Instructions

Preheat oven to 450˚F. Prepare one large baking dish or two smaller baking dishes with cooking spray.

Pat chicken dry. Season chicken breasts with generous pinches of salt and pepper.

Place all vegetables on the bottom of a baking dish in an even layer. Lay four chicken breasts evenly on top, then cover each chicken breast with hummus so entire breast is covered.

Squeeze the juice of one lemon over chicken and vegetables. Then sprinkle with breadcrumbs and smoked paprika.

Thinly slice remaining lemon, and place slices in between chicken and vegetables if desired.

Bake for about 25-30 minutes, until chicken is cooked through and vegetables are tender. Serve immediately.
