1 Lb feta cheese, drained, patted dry & cut into ½ inch cubes
1 Lb Castelvetrano olives, rinsed & dried
12 rosemary sprigs
24 thyme sprigs
4 lemon, zested
32 Oz extra virgin olive oil

Instructions

Layer cheese, olives, herbs and lemon zest in a clean jar.

Add enough olive oil to completely cover the cheese and olives.

Marinate in the refrigerator at least 8 hours (for flavor to build).

The marinated feta will keep for several weeks in a covered jar in the refrigerator.

Gift with crusty bread or lavash.

Once cheese and olives are gone, use any remaining olive oil in the jar to make salad dressing or pour over roasted and grilled vegetables.
