Ingredients

1 cup(s) lentils, cooked until tender
2 Tbsp olive oil
1 cup(s) onion, diced
1 Tbsp garlic, minced
8 Oz mushrooms, sliced
1 Tbsp Italian seasoning
30 Oz crushed tomatoes
8 Oz spaghetti, prepared according to package instructions

Instructions

Preheat olive oil large skillet to medium-high heat.

Add in onions, mushrooms, and garlic and sauté for 3 to 4 minutes until onions are translucent. Then add in Italian seasoning and continue to cook for an additional minute.

Add in lentils and crushed tomatoes then bring to a simmer and reduce heat. Continue to cook 1 to 2 more minutes. Remove from heat and serve with pasta.
