1/4 cup(s) lemon juice, plus zest from 1 lemon
1/4 cup(s) red wine vinegar
2 Oz Cento Flat Fillet Anchovies, oil drained off
6 cloves of garlic, crushed
1 1/2 Tbsp Dijon mustard
1 Tsp Central Market Organics Whole Mediterranean Oregano
1/2 cup(s) Parmesan cheese, shredded
1 cup(s) extra virgin olive oil
1/4 cup(s) water

Instructions

In a blender, combine lemon juice and zest, red wine vinegar, anchovies, garlic, mustard, oregano and Parmesan cheese.

Pulse to combine and slowly add olive oil to form an emulsion; add water to thin slightly. Season to taste with lots of cracked pepper and salt.
