Larry's Tortilla Dumpling Soup

Ingredients

6 boneless, skinless chicken thighs
1 Qt H-E-B Select Ingredients Chicken Broth
12 fl oz evaporated milk
1 Tbsp poultry seasoning
2 Tsp cumin
6 Mission Flour Tortillas, cut into 1-inch squares

Instructions

Heat a large pot over medium heat, cook chicken 8 to 10 minutes, or until nicely browned. If chicken sticks, add about a tablespoon of oil.

Add broth, milk, poultry seasoning and cumin to pot.

Stir and simmer about 20 minutes, or until chicken is tender enough to shred.

Remove chicken and, once cool enough to handle, shred with two forks and return to pot.

Add tortillas to soup, about a handful at a time stirring constantly.

Cook an additional 5 to 10 minutes until tortillas are soft like a piece of cooked pasta and serve.
