Lamb Nachos with Feta Serrano Crema

1 Lb ground lamb
1 Tbsp Adams Reserve Chimichurri Seasoning
1 Tsp kosher salt
1 cup(s) crumbled feta cheese
1 Tbsp fresh garlic, minced
2 Tbsp fresh lime juice
1 cup(s) sour cream
2 Tbsp fresh cilantro, chopped
1 serrano pepper, roasted, seeded and stemmed
2 cup(s) Queso asadero, shredded
1 cup(s) green onions, chopped
16 Oz tortilla chips

Instructions

In a bowl combine lamb together with seasoning and salt. Mix well to combine set aside for 20 minutes to allow flavors to meld.

Meanwhile, make sauce by adding feta cheese, garlic, juice, sour cream, cilantro and roasted pepper together. Blend until smooth, season to taste as needed with salt and pepper. (Add 1 tablespoon of water at a time as needed to thin sauce.) Set sauce aside for garnishing nachos.

Preheat oven to 350ºF. In a non-stick skillet brown lamb until fully cooked. Remove from heat and set aside.

Assemble nachos by adding chips to a sheet pan lined with parchment paper, sprinkle lamb, shredded cheese and green onions evenly. Bake 8 to 10 minutes or until cheese is fully melted.

Drizzle sauce over nachos and serve immediately.
