6 Oz baby arugula
1/4 cup(s) roasted salted sunflower seeds
3 kiwi, skin peeled and sliced into sticks or julienned
1/2 cup(s) fresh coconut, grated
1/2 cup(s) Asiago cheese, grated or more as needed

Instructions

In a bowl, add arugula and sunflower seeds, toss to just combine.

Arrange kiwi around salad evenly and garnish with coconut and Asiago cheese.

Dress with your favorite dressing. Season with salt and pepper to taste.

Chef's Note: I like to use a sweeter salad dressing for this application, an easy dressing is lime juice, honey, olive oil, salt and pepper.
