1/4 cup(s) Rustico Unfiltered Extra Virgin Olive Oil
1 cup(s) white onions, diced small
6 Christopher Ranch California Heirloom Monviso Peeled Garlic Cloves, minced finely
1 Tbsp fennel seeds
1 1/4 Lb hot Italian sausage links, cut into thirds
24 1/2 Oz Mutti Passata Tomato Puree with Basil

Instructions

Set Instant Pot to sauté setting, add olive oil and allow to get hot. Add onions, garlic and fennel seeds.

Stir-fry 4 to 6 minutes until onions and garlic are just starting to brown slightly. Add sausage and stir-fry until it gets a little color.

Add tomato puree, water and a generous pinch of salt and pepper. Turn Instant Pot off and place lid on.

Set Instant Pot to meat/stew setting and manually add 25 minutes on normal setting. At end of cook time, allow pressure to release fully before removing lid.

Serve sauce with your favorite pasta, garnish with Parmesan cheese and fresh basil if desired.
