Indian Spiced Chicken Legs

Ingredients

Recipe makes 4 Servings

1/4 Tsp Kosher Salt
1/4 Tsp Black Pepper
2 Tbsp Adams Reserve Curry Powder
1 Tsp Adams Ground Ginger
1 Tsp curry sauce
1 Tbsp olive oil
1 cilantro, chopped
1 Tbsp Tomato paste
15 Oz chickpeas, drained and rinsed (1 can)
2 medium Sweet potatoes, peeled and cut into 1 inch pieces
1/4 cup(s) Dried Golden Raisins
4 chicken leg quarters, skinned

Instructions

Preheat oven to 400°F.

Line a sheet pan with foil and set aside.

In a large bowl combine spices, 1 tablespoon olive oil, and tomato paste; blend well.

Add chicken and toss until coated.

Bake for 30 minutes on center rack or until juices run clear when stuck with a fork .

Sauté over medium heat, remaining olive oil, sweet potatoes, raisins and chickpeas. (Sauté until sweet potatoes are fork tender, approximately 12 minutes. )

To serve, place sweet potato mixture on plate and top with two chicken legs. Garnish with chopped cilantro.
