Ingredients

Recipe makes 6 Servings

1 non-stick cooking spray
1 Lb 93% ground beef
1 large white onion, chopped
1/2 Tsp kosher salt
1/4 Tsp black pepper
6 Oz white cornbread mix
1 medium tomato, sliced
3/4 cup(s) cheddar cheese, shredded

Instructions

Heat oven to 400°F.

Spray a casserole dish with non-stick cooking spray.

Cook beef and onion over medium heat then drain and place in prepared dish.

Combine cornbread mix according to package directions and pour uncooked batter over meat mixture and smooth out batter to cover meat.

Bake 20 to 25 minutes then top with tomato slices and cheese.

Bake 5 to 8 minutes longer until knife inserted in center comes out clean.
