1 grilling mesh
3/4 cup(s) H-E-B Specialty Series Barbeque Sauce
3/4 cup(s) H-E-B Pineapple More Fruit Spread
24 Oz Mahi Mahi Fillets
4 metal skewers
2 red onions, peeled and cut into 8 wedges
12 large chunks pineapple
3 lemons, cut each into 4 wedges
1 red bell pepper, cut into 8 squares

Instructions

Line a baking sheet with foil for easy clean up and place a grilling mesh on top. Spray the mesh with no-stick spray and set aside.

Combine barbecue sauce and pineapple spread in a small bowl.

Cut each fish fillet into 4 chunks and brush with pineapple-barbecue sauce mixture.

Thread skewers as follows: 1 red onion wedge, 1 pineapple chunk, 1 fish chunk, 1 lemon wedge, 1 red bell pepper chunk, 1 fish chunk, 1 pineapple chunk, and repeat the order.

Brush seafood skewers with remaining pineapple-barbecue sauce.

Place skewers on the prepared grilling mesh, cover with plastic wrap and refrigerate until ready to grill.

Prepare charcoal or gas grill for cooking (375°F).

Arrange the skewers on the prepared grilling mesh or tray and grill for 5 minutes per side or until fish is cooked to desired degree of doneness.

Place on platter, remove fish skewers and serve.
