Ingredients

Recipe makes 6 Servings

4 ears H-E-B Sweet Corn, or 2 Cups of H‑E‑B Steamable Super Sweet Corn, thawed
1 jalapeño pepper(s), small dice
1/3 cup(s) red onions, small diced
1/3 cup(s) fresh cilantro, chopped
2/3 cup(s) Greek yogurt
1 Tbsp Hill Country Fare Chili Powder
1/4 Tbsp H-E-B Ground Cumin
1 lime(s), juiced
1 Tsp H-E-B Kosher Salt

If using frozen or canned corn, heat a cast iron skillet on high heat, add 1 TB of grapeseed oil. Add the corn to the pan and heat for 3-5 minutes or until some pieces are charred. Remove the corn from the pan and place in a bowl to let cool, and continue to step 3.

If you are using corn on the ear, remove husks and silk from corn.

Place corn directly on grill and rotate every 3 to 4 minutes until grill marks form and corn is lightly colored. Remove from grill and allow to cool. Cut kernels from cob.

Place corn in a bowl with remaining ingredients and mix to combine. Chill until ready to serve.
