Grilled Sweet Corn with Avocado Butter

Ingredients

Recipe makes 4 Servings

4 Tbsp salted butter, room temperature
1 large ripe avocado
1 Tsp Central Market Organics Adobo Seasoning
1 Tbsp fresh cilantro, finely chopped
4 ears of sweet corn, husks and silks removed
1 Tbsp olive oil

Instructions

Prepared avocado butter by mashing butter, avocado, adobo and cilantro together.

Heat grill to medium-high heat. Rub corn with olive oil. Place corn directly on grill and cook on all side for about 1 to 2 minutes, just long enough to leave light grill marks on corn.

Place corn on a large piece of foil, nestled together. Spread avocado butter evenly over corn and seal lightly.

Place corn packet back on grill and cook for 5 to 7 minutes, or to desired doneness.

Chef’s Note: Avocado butter is not just for corn. It’s delicious as a finishing butter for beef, chicken, pork or fish.
