Grilled Salmon With Fruit Salsa

Ingredients

Recipe makes 4 Servings

1 1/2 Lb Alaskan salmon fillets
1/8 Tsp salt
1/8 Tsp black pepper
3 nectarine, seeds removed
3 kiwi
1 Large Hass avocado, seed and peel removed
1/2 cup(s) red onion, finely chopped
1/4 cup(s) cilantro, finely chopped
1 jalapeño pepper, seeded and finely chopped
2 Tbsp lime, juiced

Instructions

Prepare charcoal fire or heat gas grill on high for 10 minutes with lid closed.

Oil grill grate well to prevent fish from sticking.

Cut salmon into 4 portions and season with salt and pepper.

Dice nectarines, kiwis and avocado into 1/4-inch pieces. Toss fruit with remaining salsa ingredients and season with salt and pepper; set aside.

Place salmon on grill, skin-sides up, 4 inches above medium heat (375°F) and grill fillets for 5 minutes and turn over carefully.

Close grill lid and cook 5-10 minutes longer or until salmon is just cooked through and the center has turned from translucent to opaque (white).

Remove from grill. Trim skin from salmon, if desired. Spoon Fruit Salsa over fillets and serve immediately.
