Grilled Romaine Hearts with Marinated Feta Dressing

4 Oz crumbled feta cheese, plus more as needed
1 Tsp Central Market Organics Whole Mediterranean Oregano
1 clove of garlic, zested or minced fine
2 Tbsp red wine vinegar
1 Tbsp Grey Poupon Country Dijon Mustard
1 Tsp lemon, zest only
1/2 cup(s) extra virgin olive oil, plus more as needed for romaine
3 H-E-B Romaine Hearts, ends trimmed and hearts cut in half lengthwise

Instructions

Preheat grill to medium high heat, approximately 350 to 400F.

While grill preheats, combine feta, oregano, garlic, red wine vinegar, mustard, lemon zest and olive oil together.

Toss well to combine. Allow to sit while grilling romaine to allow flavors to set up.

When grill is hot, brush romaine with olive oil, and season liberally with salt and pepper.

Grill romaine cut side down for just a few minutes or until romaine is just slightly charred and marked. Remove from grill and allow to cool slightly.

To serve place a side of grilled romaine on a plate and drizzle with marinated feta mixture, season each to taste with salt and cracked pepper.
