Grilled Pork Tenderloin with Persimmons Agrodolce

1 1/4 Lb natural pork tenderloin
1 Tbsp smoked salt, or as needed to season pork
1 Tbsp cracked pepper, or as needed
2 Tbsp avocado oil
1 1/2 cup(s) fresh persimmons, diced small, approximately 2 persimmons
1/2 cup(s) fresh shallots, thinly sliced
1 cup(s) fresh squeezed orange juice
1/2 cup(s) apple cider vinegar
1/4 cup(s) dark brown sugar

Preheat grill to medium-high (between 375ºF and 400ºF).

Season pork liberally with smoked salt and cracked pepper. Set aside at room temperature while grill is preheating.

Once grill is hot, place pork over direct heat and cook for 8 to 10 minutes or until nicely marked. Rotate pork and continue to cook until internal temperature reaches at least 155ºF.

While pork is cooking, make agrodolce. Place a small saucepan over medium heat and add oil, persimmons, and shallots. Sauté until soft.

Add orange juice, apple cider vinegar, and brown sugar. Stir and turn down heat to a simmer. Sauce is ready when liquid has almost completely evaporated and thickened. Season to taste with salt and pepper.

Allow pork to rest before carving. Serve sauce over pork as desired.
