Grilled Peach Ceviche

Ingredients

Recipe makes 4 Servings

1 6.5 oz can Miller's Select Jumbo Lump Crab Meat, drained and rinsed gently with water
2 fresh peaches
2 Tbsp olive oil
1 Tsp balsamic vinegar
2 Tbsp orange juice
1 avocado, cubed
1 12 oz package pico de gallo
1/2 Tsp crushed red pepper flakes
1 Tsp kosher salt

Instructions

Drain and rinse crab gently.

Slice peaches into thin, flat slices, about 1/4 inch thick. Drizzle oil & vinegar over peaches.

Heat grill on high. When grill is hot, gently coat with several short bursts of spray oil. Briefly grill peaches on each side, just long enough to caramelize slightly and leave light grill marks. Peaches should still be slightly firm. Remove from grill and set aside.

Slice grilled peaches into cubes. Add crab meat, orange juice, cubed avocado, pico de gallo and pepper flakes all together in a bowl. Toss gently and chill for 30 minutes to let flavors come together.

Season with salt just before serving. Serve with tortilla chips.
