Grilled Kale Caesar Salad

Recipe makes 6 Servings
2 Lacinato Kale, bunches
2 Tbsp extra virgin olive oil
1 pinch Tsp kosher salt
1 pinch Tsp pepper
1/2 cup(s) Whataburger Kickin' Jalapeño Ranch
1/2 cup(s) cherry tomatoes, cut in half
1/4 cup(s) grated Parmesan cheese

Preheat grill to 350°F or medium heat.

Pull the kale leaves apart, leaving full leaves intact. Brush both sides of each kale leaf liberally with olive oil and season with salt and pepper.

Once grill is hot, place leaves on grill and allow to cook for about 2 - 4 minutes per side or until they just get a little charred and start to soften or wilt, remove from grill and allow to rest

Mix jalapeño ranch with Parmesan cheese and stir to combine, set aside.

Place cooled kale leaves and cherry tomatoes on a plate and toss with just enough jalapeño Caesar dressing to coat. Garnish with croutons if desired, and more Parmesan cheese.

Refrigerate and serve cold or serve fresh off the grill.
