Grilled Goat Cheese Stuffed Peppers

Ingredients

Recipe makes 8 Servings

1 Lb mini bell peppers
6 Oz goat cheese
8 Oz reduced fat whipped cream cheese
1 Tsp fresh thyme, chopped
1 Tbsp chives, minced
1/2 Tsp salt
1/2 Tsp pepper
3 Tbsp chopped walnuts

Instructions

Heat grill to medium high.

Cut peppers in half and remove seeds.

In a large bowl or stand mixer, combine goat cheese, cream cheese, thyme, chives, salt, pepper and walnuts. Mix until smooth and completely incorporated.

Spoon mixture into zip top bag. Snip one corner and pipe out filling into halved bell peppers.

Place peppers on grill and cook just until peppers begin to blister. Remove and serve.
