Grilled Fish Taco with Green apple, Jicama slaw

Recipe makes 4 Servings

4 tilapia fillets
1 Tsp Adams Reserve Lopez Family Rub
1 Tbsp extra virgin olive oil
1 cup(s) granny smith apple, julienned or thinly sliced)
1 cup(s) jicama, julienned or thinly sliced
1 cup(s) H-E-B Shredded Cabbage
1/2 cup(s) Whataburger Kickin Jalapeño Ranch
1 Tsp kosher salt

Instructions

Preheat grill to 350ºF or medium heat.

Liberally season both sides of tilapia fillets with Adams Rub and brush with olive oil (to prevent fish from sticking).

Combine apples, jicama and shredded cabbage, and mix with jalapeño ranch.

Season to taste. Chill at least 30 minutes to allow flavors to meld.

Grill tilapia about 3 - 4 minutes per side or until no longer translucent in the center (140ºF internal temperature).

Remove to a dish and flake with a fork.

Spoon tilapia into any tortilla or taco shell and top with prepared slaw and your favorite condiments.
