Grilled Chicken made with Non-dairy Yogurt

1 cup(s) Higher Harvest Dairy-free Plain Protein Yogurt
1 Tbsp fresh lemon zest
1 Tbsp dried oregano
1 1/2 Tsp kosher salt, plus more as needed for seasoning
1 1/2 Tsp cracked black pepper, plus more as needed to taste
1 Tsp granulated garlic or garlic powder
2 Lb natural chicken breasts

Instructions

In a large bowl add yogurt, lemon zest, oregano, salt, black pepper, and garlic powder, and whisk to combine.

Place chicken breasts in the yogurt mixture and turn until all sides are completely coated.

Cover bowl with plastic wrap and refrigerate for at least 8 hours (overnight is recommended) to allow chicken to marinate.

When chicken has marinated, transfer to a plate and set aside while grill preheats to 350ºF or medium-high.

Spray preheated grill liberally with non-stick spray. Arrange chicken on grill and cook for 6 to 8 minutes per side or until nicely marked.

Move chicken over indirect heat and continue to cook until it reaches an internal temperature of 165ºF. Allow to rest for 10 minutes before serving. Season to taste as needed.
