Grilled Cauliflower Steaks with Creamy Pepper Parmesan Sauce

Ingredients

Recipe makes 4 Servings

1 large head of cauliflower
1 Tbsp extra virgin olive oil
1/2 cup(s) peppercorn ranch dressing
1/4 cup(s) Non-fat plain Greek yogurt
1/3 cup(s) fresh grated parmesan cheese
1 Tsp kosher salt

Instructions

Preheat oven to 400ºF and grill to 350ºF.

Slice Cauliflower from top to stem in 1/4 to 1/2 inch slices (some pieces will be larger than others).

Rub both sides of cauliflower with olive oil and place on a sheet pan lined with foil.

Roast until just softened with a bit of color (about 15 minutes).

Combine peppercorn ranch, Greek yogurt, and Parmesan cheese to form a smooth dressing. Set aside.

Remove steaks from oven and grill about 2 - 4 minutes per side (or until both sides have good grill marks). Season to taste.

Serve with a generous dollop of peppercorn Parmesan dressing.
