Grilled Asparagus with Yogurt Balsamic Hollandaise

Ingredients

Recipe makes 8 Servings

1 Lb fresh asparagus, about as thick as a pencil
2 Tsp olive oil
1 cup(s) Non-Fat Plain Greek Yogurt
3 large eggs, yolks only
1 Tsp fresh garlic cloves, finely minced
1 1/2 Tbsp Balsamic Vinegar Reduction
3/4 Tsp sea salt

Instructions

Heat grill to medium

Place a sauce pan, half-full of water over medium heat. Bring to a simmer.

While water is heating, wash and trim woody ends from asparagus. Drizzle with oil and set aside

Place egg yolks, yogurt, garlic and balsamic reduction in bowl. Whisk and place over simmering saucepan.

Whisk constantly for 10 minutes, or until sauce is thickened, but still pourable. Add salt and whisk. Season to taste if more salt or balsamic is desired

Remove yogurt hollandaise from saucepan and set aside.

Place asparagus on hot grill and grill for 2 to 4 minutes, or until bright green and tender firm.

Place on serving tray and drizzle with balsamic hollandaise
