Grilled Angel Food Cake with Macerated Mango and Strawberry

2 large mangos, peeled and diced small
1 cup(s) fresh strawberries, diced small
1 cup(s) fresh squeezed orange juice
1/3 cup(s) fresh lime juice, juice
1 10" angel food cake, cut into 8 thick slices
2 cup(s) Heavy Whipping Cream
1/4 Tsp Kosher Salt
1/3 cup(s) Maple Syrup
1/3 cup(s) toasted coconut

Instructions

In a bowl combine chopped mangos, strawberries, and orange and lime juices. Cover with plastic wrap and refrigerate for 1 hour to allow fruit to macerate (this can be done a day in advance).

Combine heavy cream, salt and maple syrup in a bowl. Whip until stiff peaks form. Refrigerate until ready to use.

Spray grill liberally with any non-stick cooking spray. Preheat grill to medium-low heat.

Lay pieces of angel food cake on grill for 1-2 minutes, or until grill marks form.

Place each piece of angel food cake on a plate and top with the macerated fruit and whipped cream. Sprinkle with toasted coconut to garnish.
