Ingredients

Recipe makes 10 Servings

1 Lb pork breakfast sausage
10 large eggs, beaten
10 burrito flour tortillas
16 Oz frozen baby potatoes, cooked according to package directions
8 Oz Mexican style shredded cheese
10 Oz pico de gallo

Instructions

Heat a large skillet on medium-high. Cook sausage until browned and no longer pink, about 7 minutes. Remove from pan and set aside.

In a separate non-stick skillet over medium heat, scramble eggs, cooking for about 4 minutes. Set aside briefly and keep warm.

Preheat a large skillet over medium-high heat.

Gently heat a tortilla then add 1.5 ounces each of sausage, eggs, and potatoes. Top with 1 Tablespoon of shredded cheese and 1 ounce of pico de gallo.

Fold in sides of tortilla over filling then roll up. Place seam-side down in preheated skillet for about 1 minute or until browned. Flip and continue to cook for an additional minute until second side is browned. Enjoy!
