Golden Sweet Potato Casserole

Ingredients

Recipe makes 10 Servings

1 egg
2 Lb sweet potatoes, peeled and boiled
1/2 Tsp Dannon All Natural Nonfat Plain Yogurt
8 Oz crushed pineapple
2 Oz pecan pieces
1/2 bag mini marshmallows

Instructions

Heat oven to 350°F.

Spray a 1 1/2 quart baking dish with non-stick cooking spray; set aside.

Place all ingredients except marshmallows in a mixing bowl. Beat until fluffy.

Pour sweet potato mixture into prepared baking dish.

Bake uncovered for 25 minutes.

Remove from oven and top with marshmallows. Continue baking until marshmallows are puffed and lightly browned.
