Ginger Peach Chicken Thigh Skewers

Ingredients

Recipe makes 4 Servings

12 skewers
1 1/2 Lb chicken thighs, cut into thin slices
1/2 Tsp salt
2 peaches, peeled seeded and cubed (frozen can used if fresh are unavailable)
1 Tbsp ginger, grated
4 Oz H-E-B Nonfat Greek Yogurt
1 jalapeño pepper
1/2 cup(s) cilantro
2 garlic

Instructions

Soak skewers minimum of 30 minutes.

Thread chicken onto skewers, then season with salt.

In blender or food processor combine peaches, ginger, yogurt, jalapeño and lime juice.

Blend until smooth.

Place chicken in large baking dish or zip top bag. Cover with marinade and coat evenly. Allow chicken to marinate for at least 3 hours.

Preheat grill to medium-high heat. Remove chicken from marinade, gently shake off any extra and place on grill.

Grill chicken approximately 7 minutes per side, or until internal temperature reaches 165ºF.

Garnish with cilantro and lime wedges.
