16 Oz H-E-B Garlic Parmesan Baby Potatoes, heated according to package instructions
3 H-E-B Vegan Original Naan Bread
1/4 cup(s) H-E-B Organics Roasted Red Pepper Hummus
1 1/2 Tbsp H-E-B Fresh Cut Diced White Onion
3 Tbsp H-E-B Fresh Cut Diced Tomatoes
3 lemon wedges, 1 lemon cut into medium sized wedges
2 Tbsp H-E-B Copper Kettle Shaved Parmesan Cheese

Remove potatoes from bag and let cool slightly then cut in half.

Place a large skillet over medium-high heat and spray with nonstick spray. Add 1 piece of naan bread and cook for 1 minute per side or until toasted. Repeat with remaining naan.

For each taco, spread hummus on naan to cover then place1/3 of potatoes down the center and sprinkle with onions and diced tomatoes.

Squeeze lemon over potatoes and garnish with Parmesan cheese. Serve immediately.
