3/4 cup(s) yellow cornmeal
1/4 cup(s) flour
2 Tsp salt
1 Tsp H-E-B Red Cayenne Pepper
1/4 Tsp garlic powder
4 catfish fillets
1 cup(s) vegetable oil

Instructions

Combine cornmeal, flour, salt, cayenne pepper and garlic powder in a bowl and mix.

Coat catfish with mixture, shake off any excess.

Fill a 12 inch skillet with 1 cup of vegetable oil.

Add catfish in a single layer and fry until gold brown for about 5-6 minutes, depending on size.

Remove and drain on paper towels. Serve with sides of your choice.
