Easy Summer Fish Tacos with Homemade Chipotle Mayo

2 tilapia fillets
1 Tbsp Adams Reserve Lopez Family Rub
1 cup(s) Whataburger Lite Mayonnaise
1/4 cup(s) chipotle peppers in adobo sauce
1/4 cup(s) cilantro, chopped
1/4 cup(s) red onions, diced
1 lime, juiced
1 Tsp smoked paprika
4 H-E-B Mixla Tortillas, grilled

Preheat oven to 400°F. Season fillets with rub on both sides and set aside.

Place fillets in an oven safe dish or on a sheet pan and cook 8 to 10 minutes until fish just starts to flake and is no longer translucent.

Meanwhile, in a blender (or using an immersion blender) add mayo, peppers, cilantro, paprika, onions and juice. Blend until smooth season to taste with salt. Set aside.

Once fish is done, flake apart with a fork in a bowl and serve on tortillas and top with homemade chipotle mayo and your favorite toppings.
