Easy Sheet Pan Pesto Chicken with Broccoli

1 chicken breast, cut into 1 to 2 inch cubes
1 onion, cut into 1 inch pieces
12 Oz broccoli florets
1/4 cup(s) vegan pesto
1/4 cup(s) shredded Parmesan
1 Tsp garlic powder

Preheat oven to 400ºF. Line a sheet pan with foil and set aside.

Place chicken in a large bowl and add onions, broccoli, pesto, Parmesan, and 1 tbsp of olive oil. Season with 1 tsp salt, 1/2 tsp of pepper, and garlic powder. Toss to coat.

Transfer to prepared sheet pan and spread out evenly. Roast for 20 minutes or until chicken is cooked through.
