Easy Grilled Shrimp Scampi

Recipe makes 4 Servings

4 Oz lentil spaghetti noodles
9 Oz packet scampi cooking sauce, divided use
4 skewered fresh vegetable kabobs, from produce
20 extra large shrimp, (about 1 pound) peeled and deveined

Bring a large pot of water to a boil over medium-high heat. Cook pasta according to package directions. Drain and place in a large, unheated skillet. Toss cooked pasta with half the packet of scampi sauce. Set aside.

Heat a grill to medium-high heat. Spray vegetable kabobs with spray oil. Place on grill and cook for about 15 minutes, turning occasionally to char vegetables on all sides.

While vegetables are cooking, thread shrimp on 8 skewers. Spray with oil and add to grill with vegetable kabobs. Cook for 1 to 2 minutes on each side.

Remove shrimp and vegetables from skewers and add to skillet with pasta. Pour remaining scampi sauce over vegetables. Heat on medium-high just long enough to heat through. Serve immediately. Garnish with chopped fresh tomatoes, Parmesan, and fresh parsley if desired.
