Easy Breakfast Sausage Sandwich

Ingredients

Recipe makes 5 Servings

1 Lb ground pork
2 Tbsp Humble House Ancho & Morita Sauce
1 Tsp kosher salt
13 4/5 Oz package Pennymade Original Buttermilk Biscuits
2 Tbsp unsalted butter, as needed for eggs
5 large eggs
3 slices cheddar cheese, sliced in half

Instructions

In a large bowl, combine pork, Ancho & Morita Sauce and salt. Using hands, mix until well incorporated.

Place pork in a plastic bag or wrap tightly in plastic wrap. Place in fridge for a few hours or overnight.

Prepare biscuits according to package instructions (English muffins also make a great substitute).

To cook sausage, preheat a pan on medium. Form pork into 5 patties and cook about 2 minutes per side or until a brown crust starts to form and patties are cooked through. Set aside.

In a non-stick skillet set over medium-low, add 2 tablespoons butter and gently break 2 to 3 eggs into pan one at a time. Immediately reduce heat to low.

Cook eggs slowly until whites are completely set and yolks begin to thicken but not fully set. Repeat with remaining eggs.

To serve, slice open biscuits and add a sausage patty, piece of cheese and fried egg on the bottom half. Add more Ancho & Morita Sauce and cover with top half of biscuit.

Chef's Note: The pork is a great addition to scrambled eggs, breakfast tacos, or served alongside a stack of pancakes.
