Dragon Fruit Asian Shrimp Tacos

Ingredients

Recipe makes 4 Servings

8 Oz H-E-B® Shredded Cabbage
2 red pears
1/4 Tsp red onions, thinly sliced
2 Tbsp cilantro, minced
1/2 Tsp Kewpie Mayonnaise
7 Tbsp ginger, minced
1 small large navel orange, juiced
1 Tbsp olive oil
1 1/2 Lb large shrimp, peeled and deveined
2 1/2 Tbsp Adams Reserve Asian Spice Rub
10 corn tortillas
1 large dragon fruit, diced

Instructions

In a medium bowl, mix together cabbage, pears, red onion and cilantro, then set aside.

In a different smaller bowl, mix together Kewpie mayo, ginger and orange juice, then set aside.

Heat a large sauté pan on medium-high heat, then add oil,shrimp and Adams Rub; cook and toss 4-5 minutes.

Warm tortilla, then add shrimp, slaw mixture, sauce and top with dragon fruit.
