2 large English cucumbers, diced small
2 Asian pears, diced small
1 cup(s) red onion, thinly sliced or julienned
1/2 cup(s) plain Greek yogurt
2 Tbsp red wine vinegar
1/4 cup(s) extra virgin olive oil
1 Tsp lemon zest
1/4 cup(s) fresh mint, chopped
1 Tsp lemon pepper seasoning

Instructions

In a bowl combine cucumbers, pears and red onions.

In a separate bowl mix yogurt, red wine vinegar, olive oil, lemon zest and fresh mint. Mix well and season with lemon pepper seasoning.

Add yogurt sauce to the salad as needed to dress. Season with more chipotle lemon pepper as needed to taste. *Salad is best served cold.
