Cuban Style Pork Carnitas

Ingredients

Recipe makes 8 Servings

1 1/2 Tbsp kosher salt, plus more as needed to taste
1 Tbsp cracked black pepper, plus more as needed to taste
1 Tbsp Mexican oregano
2 Tbsp ground cumin
1 1/2 cup(s) fresh squeezed orange juice
1 cup(s) fresh lemon juice
5 cloves of garlic, minced fine or zested
1/2 cup(s) white onions, finely minced or grated
3 1/2 Lb boneless pork butt

Instructions

In a bowl combine salt, pepper, oregano and cumin. Stir to combine.

Add orange juice, lemon juice, garlic and onions, then whisk everything together until salt is dissolved.

Place pork into a heavy zip top bag or container.

Pour marinade over pork, seal container or bag, and shake to make sure pork is completely submerged.

Refrigerate, allowing pork to marinate at least 6 to 8 hours (overnight is best if time permits).

Once marinated, place pork and marinade into Instant Pot. Press manual button and set timer for 45 minutes, cover, seal top and allow to cook.

Once cooked, follow Instant Pot instructions for letting pressure out before opening. Shred pork with tongs and season to taste.

Serve on tortillas, if preferred, along with your favorite toppings and condiments.
