1 Lb catfish fillets, cut into 4 inch pieces
1 H-E-B Large Grade AA Eggs
1 Tsp Hill Country Fare Lemon Pepper
1/2 Tsp Lawry's Seasoned Salt
1/2 Tsp Hill Country Fare Black Pepper
1/2 Tsp H-E-B Red Cayenne Pepper
1/4 cup(s) flour
3 cup(s) Hill Country Fare Corn Flakes, coarsely crushed
3 Tbsp H-E-B Parmesan Cheese, grated
1 Hill Country Fare Vegetable Oil Cooking Spray

Instructions

Heat oven to 450°F.

Beat egg, lemon pepper, salt, black pepper and cayenne in a small bowl.

Place flour in a shallow bowl or on a plate.

Combine corn flakes and cheese in a medium bowl.

Prepare a baking sheet with nonstick cooking spray.

Coat both sides of catfish pieces in flour.

Dip in egg mixture and coat both sides with corn flake mixture.

Arrange pieces on baking sheet and allow at least 1/2 inch space between fish.

Bake about 12 minutes until corn flakes just begin to brown and fish is opaque (white) in center.
