Recipe makes 8 Servings

1 Vegetable oil no stick cooking spray
2 cup(s) corn chips
1 cup(s) Shredded cheddar cheese
1 jalapeño pepper(s), seeded and chopped
3 Green onions, chopped
1/2 Lb chorizo pork sausage, cooked and fat drained
6 Large eggs, beaten until frothy

Instructions

Heat oven to 300°F.

Spray a 11 x 7-inch baking dish with non-stick cooking spray and set aside.

Combine corn chips, cheese, jalapeño, onion, cooked sausage and eggs in prepared baking dish. Spread mixture evenly.

Bake on center rack for 20 minutes.
