1 Tbsp Hill Country Fare Canola Oil
1 1/2 cup(s) H-E-B Sweet Corn
1/2 cup(s) H-E-B Chopped 3-Color Peppers
2 Tbsp H-E-B Chopped Onions
8 H-E-B Large Grade AA Eggs
1 1/2 cup(s) H-E-B Select Ingredients 2% Milk

Instructions

Heat a large skillet over medium heat for 3 minutes.

Add oil, corn, chopped peppers and onions. Stir fry for 3 minutes or until onions are tender.

Meanwhile, combine eggs and milk in a large bowl and stir with a fork until blended.

Pour the egg mixture over the corn mixture and stir gently with a spatula until eggs are cooked (about 2 minutes).

Place eggs in a serving dish and top with cheese.
