Cola Chocolate Cupcakes with Cola Icing

1 1/2 cup(s) brown sugar
2 1/2 cup(s) all purpose flour
3/4 cup(s) unsalted butter, softened
4 Tbsp unsweetened cocoa, divided
1/2 cup(s) Low Fat Cultured 1% Milkfat Buttermilk
2 large eggs
1 Tsp baking soda
1 Tsp vanilla extract
3/4 cup(s) H-E-B Pure Cane Original Soda, divided
2 cup(s) powdered sugar
1/4 Tsp salt

Preheat oven to 350°F. Generously grease a muffin tin, any oven safe Pyrex dish or a loaf pan. Set aside.

Place all ingredients except vanilla and cola in a large mixing bowl. Use an electric mixer on low speed until slightly combined, then turn to medium speed until smooth.

Add vanilla to cola. With mixer on low speed, slowly pour into batter just until everything is combined. (Don’t over mix.)

Pour into prepared tin and bake 35-50 minutes (depending on tin size) or until a toothpick inserted in the center comes out clean.

Cool completely. Dust with powdered sugar or frost.

To make icing: In a large bowl sift together powdered sugar, salt and unsweetened cocoa. With a wire whisk, slowly add enough cola to make a paste. Add more cola or powdered sugar as needed to get the desired consistency.
